Banana and chocolate is a classic combination, and the dark chocolate adds some bitterness to the very sweet bananas, making sure the cupcakes don’t taste overly sweet.

The chocolate ganache takes a few hours to cool and set, so plan ahead. If you don’t have time to make a ganache just melt the chocolate and spread it on the cupcakes, or make a simple frosting with confectioners sugar and water.
