Hot chili cheese poppers – jalapeños with a centre of melted ricotta and cheddar cheese and covered in crisp bread crumbs. A delicious starter or snack with a splash of lime and a glass of beer.
Jalapeños are perfect for the chili cheese poppers. They have the right amount of heat but use any chili you like. Just make sure they have a fairly large cavity, you can fill with the cheese mix.
Panko bread crumbs are very fluffy, making the end result very crisp and beautiful. If you cannot get a hold of Panko bread crumbs, use what you got or make your own bread crumbs by crumbling white bread and baking it in the oven at 100°C for about 30 minutes.
The filling, shown on the pictures, is quite light-coloured because I have used a white, aged cheddar cheese. If you prefer a yellow cheddar cheese use that instead.
