Danish cucumber salad is a quick and really easy way to enjoy pickled cucumber. No cooking is involved and in just a few hours you will have wonderful pickled cucumber, perfect with meat dishes, especially roast chicken, and a must have with Danish hot dogs.
Danish cucumber salad is made of very few ingredients; Cucumber, vinegar, sugar, salt and pepper and can be served within 30 minutes but I prefer the cucumber to soak a little longer, preferably a few hours.
Use ordinary cucumbers for this dish, not gherkins. In Denmark we always keep the skin on, and I think the colours are beautiful, but feel free to peel the cucumber if used to.
The acidity of vinegar differs. This recipe is based on a vinegar with an acidity of 5%.
Store cucumber salad in the fridge for up to 7 days. The intensity of flavours doesn’t change but the slices of cucumber will turn softer over time.
