Grilled salad with asparagus, spring onions, radishes, sugar snaps, feta cheese and fresh chervil. A perfect side dish when the grill is hot and you are about to roast a chicken or some meat. Also a beautiful vegetarian dish with lots of flavour and crunch.
Both asparagus and spring onions are briefly blanched before grilling in order to keep them tender without the risk of them charring too much. The blanching also reduces the powerful taste of raw onion, making the dish sweeter and more tasty.
The grilled salad is made without any dressing but feel free to add a nice vinaigrette made of olive oil and lemon juice.
If you cannot find white asparagus, replace with more green asparagus. The white asparagus, however, is very delicate and adds another dimension to the dish.
