Potato salad is a classic summer dish, perfect with grilled meat. In Denmark it is often served as a side dish to meatballs, and the combination is found on menus all over Denmark when it is summer.
Potato salad can be made in various ways. Some people use only mayonnaise, some use sour cream. I prefer my potato salad to be made with creme fraiche and a dash of mayonnaise but use any dairy you like.
The radishes give some crunch and a bit of heat. The chives enhance the flavour of onion and give a beautiful colour.
Make your potato salad at least half an hour before servering. The longer time the flavours get to blend the better.
If you want the potato really pretty sprinkle with purple chive flowers.
