Sweet and sour chicken with pineapple, tomato, cucumber and spring onion. A recipe from the Phra Nang Peninsula in Southern Thailand, where I was 15 years ago on holiday for three months.
I had the dish at a simple street kitchen and I was amazed how good it was, when you considered the simple ingredients.
The base is chicken, fresh fruit and vegetables and lots of tomato ketchup. Not an ingredient you normally think of as Thai but it is perfect with the other ingredients.
The fresh pineapple adds sweetness and sourness at the same time. If you use canned pineapple, you need to add vinegar or lime juice in order to get the wanted sourness.
Since the dish does not contain any chilli, children can enjoy the sweet and sour chicken as well. Add a few slices of fresh chilli if you want a bit of heat.
Serve with plenty of jasmine rice and coriander.
