Thai chicken soup, also known as Tom Kha Gai, is a sour, fragrant hot soup made with galangal, coconut milk, chicken, lemon grass, kaffir lime leaves and lime juice.
The soup is found all over Thailand and is a classic among Thai soups. There are many varieties of the soup, some can be a bit spicy, but the versions I have had in Thailand have never been hot, only very aromatic and fragrant. I like, however, to add a bit of fresh chilli before serving.
Creamy coconut milk is the base of the soup but plenty of galangal, lemon grass, kaffir lime leaves and lime juice add the needed sourness and acidity. Without it, the soup tastes bland and boring.
Thai chicken soup is perfect as a starter. Serve in small soup bowls, sprinkled with chilli and fresh coriander.
