Tomato tart with feta

Tomato tart with feta, olive and fresh oregano, inspired by the Mediterranean. Perfect in the summer when the tomates are tasty and ripe, and you want a quick and easy meal.

A healthy, delicious and nourishing tomato tart. Very good with wholemeal shortcrust pastry but use any pastry you like.

Use a good feta made from sheeps milk or a mixture of sheep and goats milk for more flavour.

Serve as a sidedish for chicken or lamb, or serve with a green salad and a nice bread.

You can eat the tart warm or cold and any leftovers are perfect for a picnic or lunch.
